
This Aldi Specially Selected Gourmet Pasta Sauce Siciliana is the second of four flavours in the series and follows on from the Calabrese. It represents the region of Sicily where aubergines are to be found in numerous different forms in local specialities, including pasta alla norma. This sauce described as a ‘traditional Sicilian style sauce with eggplant, Grana Padano Cheese DOP and basil’.

Prepared with 500 g beef mince and 400 g mushrooms, the sauce has a tomato base with pronounced notes of salty cheese that round out the acidity and sweetness in usual tomato sauces. Cubes of eggplant retain their shape, while soaking up the flavour of the sauce. Overall, the saltiness from the cheese overwhelms the sauce and pasta consequently, begging for some acidity to cut through the heaviness.
