Fujimi Dorayaki specialises in dorayaki, a Japanese-style pancake sandwich traditionally filled with azuki paste, here extended with a mix of classic and non-traditional fillings.

Classic Mochi Red Bean ($3.50)

Two castella-style pancakes stamped with the store’s logo, enclosing red bean paste and mochi. The pancakes were prepared in advance, resulting in a cool, pre-set texture rather than a warm, freshly assembled feel. The crumb was soft with a mild sweetness, pairing cleanly with the azuki. The mochi component introduced a slippery, syrup-coated surface that caused it to shift out of place with each bite, disrupting cohesion. Smaller, integrated pieces would have improved distribution and texture.

 

A later visit to the CBD location provided a broader view of the range.

Red Bean & Mochi ($4.50)

Consistent with the earlier version. The mochi added chew but little structural benefit, with the red bean paste carrying the flavour and balance more effectively on its own.

Purple Sweet Potato ($3.80)

The filling held a smooth, dense paste consistency that anchored the pancakes without excess moisture. Flavour was rounded and mildly sweet, aligning well with the neutral pancake base. This combination maintained structure and clarity across each bite.

Meet Taro ($3.80)

The taro filling presented with a soft, loose texture that lacked containment, pushing out from the edges under pressure. A pronounced cream cheese note dominated, shifting the flavour away from expected taro characteristics. The overall effect was unbalanced, both texturally and in flavour.


Overall, the base pancakes provided a stable, lightly sweet foundation. Success depended on the filling: firmer pastes maintained structure and clarity, while softer or more fluid fillings disrupted both.
