This Mixed Nuts Shark Fins 1 Yolk Mooncake from Thanh Huong Cake Shop is our first ‘savoury’ mooncake, having been accustomed to the kind featuring lotus paste and the more modern sweet varieties.
The mooncake was 8 cm in diameter and 3.5 cm in height. As its name suggests, it contained mixed nuts, shark fin, and one yolk.
The mooncake has a sweet savoury aroma much like beef jerky. Eaten at room temperature, the mix of crunchy almonds and sesame seeds with firm pops of juicy candied wintermelon delivered a very prominent sweetness with a deep savoury flavour that recalled pork floss. The sweetness in this mix built in intensity as it was chewed through, becoming so unrelenting that the comparative ‘blandness’ of the salted egg yolk centre — of which we’re not usually a fan — brought welcome relief. Overall, this savoury mooncake was intense both in its taste and texture, yet with a similarly overwhelming heaviness as the lotus paste variety.
