This is the Nissin Foods Karaage Powder Yuzu Koshō Flavour. It’s a yuzu, black and green pepper flavoured powder for making fried chicken that was developed under the supervision of Karaage Shigemori, a store located in Kōbe that has won the highest award in the ‘Karaage Grand Prix’ for the ‘Central Japan Taste Variety’ category for the past twelve years.
We used the powder by dissolving 100g of the powder in 100 mL of water and marinating the chicken thigh for 10 minutes. Frying the chicken pieces in 170-180°C oil for 4 minutes or until golden in colour gave us juicy chicken thigh with a fresh, zesty yuzu aroma accompanying the audibly crisp thin karaage batter. The presence of the black and green pepper gave the batter an enjoyable warmth without overwhelming or slowing us down, with its scent lingering in the aftertaste along with the yuzu. Overall, this was a n elegantly balanced batter base that we have happily repurchased.
