The bar was milk chocolate with one side sprinkled with sea salt and Tasmanian pepperberry.

Upon tasting, the initial sensation on the palate was one of saltiness from the sea salt on the surface. Upon biting into the chocolate, bold peppery notes emerged immediately, initially surprising but quickly revealing themselves as a fitting complement to the sea salt, imparting a distinctly savoury profile to the chocolate. As the chocolate melted, the salt continued to subtly emerge in the background, while the texture became smooth with a rich creamy sweetness. The savoury hint of sea salt lingered as a finishing flavour, with a subtle fruity undertone from the pepper.
Overall, the chocolate’s sweetness was prominent, but the skillful incorporation of sea salt and pepperberry provided a balanced contrast, preventing the savoury quality from overpowering while avoiding an overwhelming sweetness. It was evident why this chocolate was awarded the Academy of Chocolate Bronze Winner in 2022—remarkably sweet, smooth, and perfectly seasoned with delicate flavours.
