Marusan Hitotsu Ue no Tōnyū Unprocessed Soy Milk

This is the Marusan Hitotsu Ue no Tōnyū Unprocessed Soy Milk, which has a flavour comparable to raw soy milk. It contains at least 11% soybean solids, significantly less than the 18% in the Kikkoman version.

The beverage had a beige hue, similar to its packaging. Consumed cool, it had a thinner mouthfeel than processed soy milk but a similar consistency to the unprocessed Kikkoman version, despite the lower soybean content. The flavour began with a notably grassy note and developed into richer, creamier, beanier notes comparable to the processed version. This evolved to a subtle savoury cereal quality in the finish, leaving a clean aftertaste and a slightly lingering astringency. Overall, compared to Kikkoman’s unprocessed soy milk, this version had a less grassy initial flavour, a richer and smoother beanier flavour, and a less astringent finish. These qualities make it the preferred version for unprocessed soy milk, though we would just as easily opt for Kikkoman’s processed version, which has a similar full taste to this unprocessed version.
