This is the Nippon Yell Gummy Gifu Hida Apple, made with juice from Hida apples cultivated in the Hida region of northern Gifu Prefecture. Representing the fruits of autumn, Hida apples are known for their firm texture and high sugar content, qualities attributed to the region’s pronounced temperature differentials between day and night.
Each gummy measured approximately 2 cm in diameter and 1 cm in height, with an orange-yellow hue and a sweet, juicy apple aroma. The outer gummy provided a firm, bouncy chew that contrasted with the softer, jelly-like centre. Apple flavour emerged immediately from the first chew, beginning with a mellow sweetness before transitioning into the core’s richer, refreshing sweetness, accompanied by moderate acidity by mid-bite. The firmer outer layer prolonged the chew and offered its own sweet-tart, juicy contribution in the latter half, layering depth into the overall flavour. The result was a well-rounded expression of apple—sweet, juicy, and bright—reminiscent of apples at peak ripeness, without descending into artificial or cloying sweetness.
