Kabaya Shari in Gummy Sawarayaka Muscat Soda

This is the Kabaya Shari in Gummy Sawarayaka Muscat Soda. It did not contain fruit juice but instead used muscat fragrance.

Each gummy was dome-shaped, measuring approximately 2 cm in diameter and 1.5 cm in height, with a pastel green dome flecked with darker green and a darker green base.

On tasting, the smooth surface and slightly opaque base provided an initial light ‘crunch’ before yielding to a firmer, chewy interior with limited elasticity. The muscat flavour was concentrated within the gummy core, offering a bright and sweet muscat note at the outset that developed into a gentle tartness mid-chew. As the outer layer dissolved, the crystalline coating released a cooling sensation without sweetness—suggesting the crystals were not sugar—creating a refreshing mouthfeel reminiscent of carbonated soda.

Overall, an inventive take on muscat soda, offering an engaging contrast between the cooling exterior and the chewy, aromatic core.
