
This is the Koikeya Niche Rich Black Wagyu Rich Truffle, a crinkle-cut chip from Koikeya’s premium “Niche Rich” line.

The chips presented in varied sizes, approximately 4–6 cm in diameter and around 1.5 mm thick, with a crinkle-cut form. The surface showed a light yellow base coated with a yellow seasoning and larger black flecks. Aroma opened with an unmistakable, rich truffle note, immediate and pronounced.

Initial contact delivered a strong savoury profile, with the chip fracturing cleanly into a sustained crunch, supported by the ridged structure. Through the mid-palate, the beef character became apparent, presenting as a rich, fatty profile with a distinct note recalling rare-cooked beef, suggestive of myoglobin-like depth. This was supported by a bold umami intensity, with a slight, controlled acidity preventing saturation. The truffle was more dominant on the nose than on the palate, where it integrated closely with the beef, reinforcing the overall richness rather than standing apart. Towards the finish, the beef notes receded, revealing a cleaner resolution than typical beef bouillon-style flavouring, while the truffle lingered prominently into the aftertaste. Texture remained consistently crisp, with the ridged cut sustaining crunch through breakdown, without oiliness interfering with the structure.
Overall, a crinkle-cut chip with a layered beef–truffle profile and sustained crunch, resulting in a rich but controlled savoury structure.
