Banana Croissant ($8.00; from Katsu, Cabramatta)
Initial contact, post-toasting, delivered a softened exterior that did not fully re-establish crispness, yielding with minimal resistance. Through the mid-palate, the laminated interior separated into flaky, butter-rich layers, transitioning into a dense, creamy filling. The crème pâtissière presented with a silky, custard-like consistency, carrying a vanilla sweetness that integrated with the pastry. The banana contributed a soft texture and a bright, tropical profile, introducing mild acidity that tempered the overall richness. Flavour developed towards a salted butter caramel direction, with the caramelised banana reinforcing depth. A light chocolate drizzle added a secondary layer of richness, sitting above the caramel tones without overwhelming them.
Sonoma Bakery is located at and stocked by various locations around Sydney.
