Black Sesame Tofu Frappe ($11.80)
Initial contact delivered an intensely nutty and savoury black sesame profile with notably restrained sweetness. The frappe texture provided body and richness while allowing the sesame flavour to remain the clear focal point. Through the mid-palate, the roasted nuttiness deepened further, displaying remarkable concentration and persistence. The silky tofu integrated seamlessly into the beverage, complementing the sesame with subtle bean notes while contributing additional smoothness. Osmanthus blossoms added visual appeal but little discernible floral flavour. The black sesame remained dominant throughout, with the tofu acting primarily as a textural and structural component. Finish resolved into lingering roasted sesame notes, with the tofu becoming more apparent only after the sesame receded. The result was exceptionally balanced despite the intensity of the primary flavour.
