This is Shiny Apple Juice Jonagold, made from 100% Jonagold apples cultivated in Aomori Prefecture. The juice was extracted using the mippei shibori (“sealed squeezing”) method, in which the juicing occurs in a sealed environment to minimise oxidation and preserve freshness. Jonagold is a hybrid of Jonathan and Golden Delicious, combining the tartness of the former with the mellow sweetness of the latter.
The juice had an opaque, beige-tinged hue and a clean, sweet apple aroma with minimal acidity. Consumed chilled, it delivered a honeyed sweetness upfront, immediately followed by a well-judged tartness that brought clarity and refreshment to the profile. The overall flavour was crisp and vibrant, striking a notable balance between sweetness and acidity, without veering into cloying territory. It captured the essence of biting into a fresh, firm apple with a taut skin and juicy interior.
Compared to the Fuji, which offers a richer and more rounded sweetness, the Jonagold expression here was more refined and structured. It called to mind the elegance of varieties like Shinano Gold, where a lively acidity complements a restrained sweetness. A well-balanced juice that would likely appeal even more to those who appreciate the crisp bite of the fresh apple itself.
