My Aunt’s Handmade Noodles has outlets in both Burwood and Eastwood, each holding strong Google ratings, so expectations were set high for some Xi’an-style noodles.

Biang Biang Noodles (Four-in-One) ($17.90)
Marketed as one of their signature dishes, the portion size was generous, though the hand-cut noodles leaned doughy and overly filling, lacking bounce and texture. Without folds or pockets to catch the toppings, the result was a bowl where the condiments pooled unless eaten with a spoon. The vegetable cubes, particularly potato and carrot, were slightly undercooked, retaining a distracting crunch. The four components blended into a somewhat indistinct mix rather than allowing any single element to shine. The Burwood rendition proved far superior. This version carried no noticeable spice.

Braised Beef Brisket Noodles ($16.90, mild only)
Here, too, the noodles were dense rather than springy. The broth was serviceable but unremarkable, missing the deeper beef body one might expect. Despite its appearance, it was only lightly spiced. The brisket pieces were somewhat tough and lacked tenderness.
Overall, the noodles were serviceable but not dishes one would rush back for—an unexpected outcome given the consistently high ratings across both their Burwood and Eastwood stores.
