This is the Bourbon Cookie Mocchiri Warabimochi. It featured a kinako cookie with a warabimochi centre to deliver its shittori mocchitto moist and chewy texture.

Each cookie was approximately 5 x 3.5 x 1 cm in size, with a soft and smooth golden brown exterior and a pale green interior studded with brown flecks.
On tasting, the cookie had a soft texture reminiscent of fig newtons found in the West. The kinako imparted a nutty flavour with restrained sweetness, contrasting with the chewy warabi mochi interior, which was slightly less soft and pliable than fresh warabi mochi. The interior delivered the rich molasses like sweetness of kuromitsu without being overly sugary, pairing well with the nuttiness of the exterior. The combination of warabi mochi with kinako and kuromitsu, a classic in Japanese flavours, worked well in this format.
