Senbei from the Tsugaru region, which includes Hirosaki City, are distinguished by their thick wheat-based dough. This particular variety is the Ōyama Senbei Teyaki Tsugaru Senbei Pistachio, purchased from Koyama’s main store near Hirosaki Castle.
Each senbei measured approximately 7 cm in diameter and 2.5–5 mm in thickness, featuring a golden-brown flour base embedded with 12 whole pistachios.
The thick wheat-based senbei offered a firm, snappy crispness when bitten into, similar to crisp flatbread, delivering a light sweetness complemented by the toasty, caramelised flavour of the browned edges. This sweetness was balanced by the generously distributed pistachios, which provided a denser crunch, rich roasted nuttiness, and a subtle savoury depth.
The combination of the crisp senbei and the pistachios created a snack that was exceptionally crunchy and nutty, with a mellow sweetness that made it highly enjoyable and worth repurchasing.
