On tasting, the surface had a slight stickiness that introduced an initial sweetness. The cake broke easily into a fine crumb. Although it appeared dense, the texture was quite tender. A light sugar coating created a melt-in-the-mouth quality that allowed the hōjicha flavour to spread gradually across the palate, carrying a mellow balance of sweetness and gentle roast. A faint astringency appeared in the aftertaste. The roasted hōjicha character was more pronounced in the aroma than in the flavour itself, where it remained relatively restrained.
