Each piece was rectangular in form, measuring approximately 5 × 3.5 × 2 cm, with a pale yellow-green hue and a restrained Longjing aroma characterised by soft nutty notes and a gentle, roasted green tea.
On tasting, the shortbread delivered a dry, fine crumb that yielded readily to the denser yet still soft filling. The pastry itself was notably unsweetened, leaning savoury with a pronounced margarine profile. The Longjing character emerged most clearly from the filling, presenting as a clean, floral green tea note that read fresh and lightly toasted. However, the pineapple component was largely absent, lacking both acidity and fibrous tropical character. Instead, the flavour skewed towards winter melon sweetness, with the tea and savoury pastry dominating the profile. This imbalance aligned with the ingredient list, where winter melon purée appeared as the primary component and pineapple jam was listed much further down.
Overall, an interesting tea-forward pastry with pleasing texture, but one that underdelivered on pineapple character and leaned too heavily on savoury pastry and Longjing notes to feel cohesive.
