Bean Code Tofa Kuromame Soy and Soy Mochi Waffle

This is the Tofa Kuromame Soy ($7.30, 75% sweetness, no ice) from Bean Code. It featured black soybean milk, which is higher in protein than yellow soybean milk, as well as housemade soy pudding made from yellow soybeans. The black soybean gave the milk a green-grey colour while the yellow soybean pudding is an off-white colour.

Consumed chilled, the black soybean flavour came through with a fragrant nuttiness with a gentle floral sweetness that is much like the Uchiwaya Black Soybean Tea, but with a more viscous mouthfeel yet less creamy than full cream milk. The tofa was soft – much more so than the grass jelly or pudding often available as a topping in boba – and came up the straw easily to provide a thicker, slightly creamier mouthfeel to the overall drink rather than a point of chewy textural interest.

Finally, these Soy Mochi Waffles ($4.50 for 1, $8.00 for 2) were an additional snack offered at Bean Code.

Made fresh to order, these waffles were served piping hot with an audibly crisp exterior and soft chewy interior. They took on the texture and flavour of the glutinous rice flour dough of Chinese jiānduī rather than the softer stretchy quality of Japanese mochi. The presence of soy was not distinct in these tasty snacks.
