
This is the Ecuador single-origin, washed coffee produced by the Jumbo family in the Sozoranga region of Loja, Ecuador, prepared as an espresso ($5.50, +$2.00 for single origin) by Fidelity in Katoomba.
The espresso presented with an opaque, deep brown-black hue and a creamy crema. Aroma opened with pronounced, syrupy stone-fruit acidity.
Initial contact delivered the same stone-fruit acidity at the head of each sip, accompanied by a creamy, syrupy mouthfeel reminiscent of creaming soda. This texture coated the palate and lingered beyond the flavour itself. Through the mid-palate, moderate roasted notes emerged to match the initial fruitiness in intensity, introducing a notable bitterness that persisted towards the finish. The aftertaste resolved cleanly, with a subtle sweetness providing some relief from the lingering roast bitterness.
The pronounced acidity made this espresso better suited to a milk-based preparation, where the milk could soften its sharper edges. However, we remained more partial to darker roasts, which typically offered a gentler acidity profile.
Overall, an espresso with a layered progression from syrupy stone-fruit acidity to moderate roasted bitterness, supported by a creamy, coating mouthfeel and a clean, subtly sweet finish. The pronounced acidity and lingering bitterness gave it a bold profile, although a darker roast would better suit our preference for a less acidic cup.
