Continental Pasta Primavera with Vine-Ripened Tomato

This Contintental Primavera with Vine-Ripened Tomato is a quick, easy and delicious meal for one when there’s some leftover milk sitting in the fridge.

The package contained uncooked pasta as well as dehydrated pasta sauce made with tomato, onion, peas, beans, capsicum and garlic. To prepare, add 1/4 cup milk and 3/4 water and cook uncovered for 12 minutes.

This pasta surprised me with its texture and flavour. As the pasta is cooked from dry pasta, it retains the firm al dente mouthfeel unlike the offputting, mushy texture of cooked pasta in canned soups. On top of that, the sauce had a thick and rich tomato flavour that was sweet and tangy, and even the rehydrated pieces of onion, peas, beans and capsicum retained some bite and flavour.

It’s a pity that this flavour was no longer available as it is delicious, but in the 12 minutes of preparation time required for this pasta, I could’ve just as easily added a jar of pasta sauce to some boiled too.
