
Following on from the spring-themed shrimp rice crackers, this is the Keishindo Amaebi Hamayaki. Hamayaki is a style of preparing seafood often done on the beach and involves skewering the fish whole and then grilling it using white charcoal.

Contained within this bag were a whole grilled sweet shrimp as well as six ebi senbei, each adorned with a centred spiral of seaweed.
The intact shrimp offered a delectable crunch, courtesy of the crisp rice puffs enveloping its underside. Its flavour was rich and reminiscent of the intensity found in a broth crafted from simmered whole prawns. Though the temptation to indulge in multiple pieces was strong, the seaweed-infused ebi senbei provided their own satisfying appeal. The inclusion of seaweed contributed an additional layer of umami complexity to the already deep oceanic flavour of the ebi, showcased within the senbei. Remarkably, the thinness of the snack didn’t detract from its inherent crunchiness. In summary, these senbei were a luxurious yet immensely enjoyable treat. Particularly noteworthy was the ‘whole shrimp’ variant, which stood out as the highlight, justifying its premium status.
