Koko Black x Tarts Anon Chocolate Leatherwood Honey Tart

In celebration of World Chocolate Day, Koko Black collaborated with Melbourne’s Tarts Anon to produce a limited-edition Chocolate Leatherwood Honey Tart ($14.00/slice).

The tart was inspired by Koko Black’s Tasmanian Leatherwood Honeycomb Chocolate, with seven layers:

Beginning with a chocolate-infused twist on Tarts Anon’s signature shortcrust pastry, it is then delicately layered with leatherwood honey caramel. Each bite reveals a luscious combination of moist peperkoek sponge and rich dark chocolate custard, topped with silky honey and milk chocolate cremeux. As a final indulgence, a hidden chocolate surprise awaits beneath a mirror-like chocolate glaze adorned with gold cocoa nibs.

The shortcrust pastry was delightfully thin, providing a crisp crunch with an unsweetened, slightly savoury quality that complemented the softer textures and sweeter flavours of the tart filling. The layers were distinctly stratified, each offering a unique texture: the caramel provided a thick, lingering mouthfeel, while the peperkoek offered a large crumb and gently spiced flavour that elevated the piquant floral notes of the leatherwood honey, which lingered pleasantly in the aftertaste. Even the chocolate, with its slight variations between dark and milk components, added depth, alongside the crisp macadamia. Overall, this was an excellent chocolate tart with balanced richness and incredible complexity from the varied textures and subtle flavours in its seven layers.
