Prawn with Pork and Mushroom Wonton Soup ($16.80)

The dish presented as a short soup with a lightly coloured broth and twelve dumplings, accompanied by bok choy. The broth showed a mild pork and vegetable base, seasoned primarily with salt rather than extended bone extraction. On tasting, the initial contact delivered a clean but noticeably saline profile. The dumplings contained prawn (both fresh pieces and dried shrimp), shiitake, black fungus, and pork. The skins were thin with a soft elasticity, while the filling showed a gentle bounce and a well-integrated, savoury profile, with mushroom notes most prominent. The dumplings were sufficiently seasoned without requiring condiments. The broth remained consistent in salinity through to the finish, limiting drinkability. Bok choy retained a crisp texture.

Housemade Dandan Noodles ($16.80)

The dish presented with noodles coated in a generous sauce, topped with seasoned pork mince, mustard greens, and peanuts. Initial contact delivered a savoury profile with moderate heat. Through the mid-palate, the pork mince contributed depth, while the sauce provided full coverage of the noodles. The noodles had a firm, al dente structure, though with less elasticity than expected. The peanuts introduced a firm crunch, adding textural contrast. The finish carried lingering savoury and mildly spicy notes without significant shift in profile.

Across both dishes, seasoning was assertive, with stronger performance in dumpling structure and filling composition than in broth balance.
