The fried rice contained small pieces of scrambled egg and finely diced carrot, with grains cooked to a well-separated texture. Despite this, it lacked the gentle tang and savoury depth characteristic of tomato rice, which would have paired better with the fried chicken. The chicken itself was adequately tender but not particularly juicy or crisp, resulting in a somewhat flat overall impression.

BBQ Pork with Spring Roll with Minced Prawn on Sugarcane with Vermicelli ($27.00)
This combination plate featured sugarcane prawn, spring rolls, and grilled pork — typically among the highlights of Vietnamese cuisine — yet none of these elements fully met expectation. The sugarcane prawn, though lightly orange in colour and likely made with prawn paste rather than whole prawn meat, lacked the springy, elastic texture one would expect. It was nonetheless the best of the three components. The spring rolls were over-fried and minimally filled with pork and carrot, tasting oily and lacking seasoning. The grilled pork was strongly seasoned with ginger and garlic, rendering it overly salty and out of balance with the dish’s intended flavour profile. The accompanying salad did not provide sufficient crunch or freshness.

Overall, Saigon B&B delivered a meal of generous portions but inconsistent execution, with missteps in seasoning, texture, and component balance. More of a local convenience than a location to compare to the more authentic executions of these Vietnamese dishes available in Bankstown and Cabramatta.
