This is Quỳnh Trân Bánh Dừa Nướng, a specialty from Quảng Nam province in Central Vietnam, featuring a baked coconut biscuit made with fresh coconut (70%), glutinous rice flour, sugar, and vanilla.

Each package contained 10 individually wrapped bags, each holding three biscuits. The biscuits were rectangular, measuring approximately 6 × 3 cm and 2 mm in thickness, with a golden-brown hue and a visibly dense structure of compressed coconut fibres. Aroma opened immediately with a rich, toasted coconut note.

On initial contact, the surface was dry and smooth, delivering immediate sweetness. The structure broke with a firm, dense snap, maintaining integrity before fragmenting. Through the mid-palate, the coconut fibres released a pronounced aromatic nuttiness, while the biscuit base contributed a strong palm sugar sweetness. The structure required continued chewing, during which the sweetness intensified rather than receded, with no counterbalancing savoury or bitter elements. Towards the finish, the sweetness remained dominant, with the coconut shifting more towards toasted and fragrant notes. Aftertaste carried lingering palm sugar sweetness alongside a persistent toasted coconut aroma. Texture moved from a firm snap to a fibrous chew, resulting in a dry, persistent breakdown with sustained crunch.

Overall, a crisp coconut biscuit with strong palm sugar sweetness and limited flavour restraint. We prefer the more balanced profile of Cơ Sở Bánh Kẹo Thái Bình Bánh Dừa Nướng.
