Jindan Honpo Oe Original Jindan Daifuku

Jindan Honpo Oe produces two of Yamagata Prefecture’s most popular sweets—jindan daifuku and jindan manjū—both filled with jindan-an, a coarse bean paste made from the prefecture’s branded edamame, dadacha-mame.

This is the Jindan Honpo Oe Original Jindan Daifuku.

Each daifuku consisted of coarsely mashed dadacha-mame encased in mochi made from Hime no Mochi, Yamagata’s branded mochi rice. It measured approximately 5 cm in diameter, with a green-hued centre and a white exterior.

On tasting, the mochi exterior had a soft, tender chewiness. The jindan-an filling was generously packed with dadacha-mame, mashed to a softer consistency than the zunda paste commonly found in mochi from Sendai. This provided a rich edamame flavour and a texture that, while still offering some graininess, blended smoothly with the mochi. The sweetness of the jindan-an balanced well with the savoury green notes of the edamame and the soft, chewy mochi, making it a souvenir from Yamagata well worth repurchasing.
