
This is the Ota Himonoya-san Salmon Toba, made from salmon harvested in Hokkaidō Prefecture.

Each piece measured approximately 7–10 cm in length, 2–2.5 cm in width, and 2–3 mm in thickness, with a vibrant orange to dark red hue. The strips had an appealing rich, distinctly salmon aroma, a smooth and dry exterior, and a firm-to-hard yet flexible texture.

On tasting, the dried salmon had the essence of fish jerky. The flavour began mild, but with a few chews, it released a concentrated salmon flavour that highlighted the mellow sweetness of the flesh, a subtle oiliness, and rich umami. The fibrous texture provided a satisfying chew without being intrusive or sticking to the teeth, creating a luxurious mouthfeel. The flavour lingered as a soft yet pleasant salmon aftertaste.
Overall, the rich flavour and enjoyable texture of these dried salmon strips made them a highly satisfying high-protein snack, well worth repurchasing.
