Silent Sift, Mascot

These are the Silent Sift Mooncakes for the 2024 Mid-Autumn Festival. A number of gift sets were offered for sale via Instagram stories, with pick-up from a residential location in Waterloo.

Each gift set included four mooncakes, boxed and packaged in a sturdy woven bag. The mooncakes were:

  • Jade Bunny: Classic crust with traditional lotus seed paste and egg yolk.
  • Harmony: Osmanthus-flavoured crust with osmanthus red bean paste and a chestnut centre.
  • Prosperous: Classic crust with roasted peanut filling and white chocolate ganache.
  • Togetherness: Pandan-flavoured crust with coconut and kaya filling.

Prosperous (classic crust with roasted peanut filling and white chocolate ganache) was a standout, offering a delightful texture. The thin crust and the satisfying crunch of chopped peanuts created a rich, savoury nuttiness, beautifully offset by the creamy sweetness of the white chocolate centre. The contrast made this our favourite mooncake, closely followed by Harmony.

Jade Bunny (classic crust with traditional lotus seed paste and egg yolk) was a well-executed, traditional Cantonese mooncake. The lotus paste was light and not too sweet or heavy, while the salted egg yolk was firm but not overly salty, making for a balanced and enjoyable bite.

Harmony (osmanthus crust with osmanthus red bean paste and chestnut centre) impressed with its honeysuckle-like floral notes from the osmanthus, which added depth to the sweetness of the red bean paste. The smooth chestnut centre added an earthy dimension, while the chunkier texture of the red bean provided a pleasant contrast without being cloying. This was the sweetest of the four mooncakes.

Togetherness (pandan crust with coconut and kaya) featured a coconut and kaya filling that had a subtle savoury quality with a grassy vanilla note from the pandan. However, the texture of the crust, combined with the filling, resulted in a slightly prolonged chew that left a gluggy finish. The addition of a traditional mooncake element, like salted egg yolk, could have provided a needed contrast.

Overall, these Silent Sift Mooncakes were beautifully crafted, with elegant and thoughtful flavour combinations. They offered a modern take on traditional mooncakes, executed with technical skill.
