
This is the Bibigo Kimchi Young Radish Kimchi. It contained 66% salted young radish stems.

The kimchi released a pungent garlicky aroma upon opening the packaging. The young radish stems, about 7 cm in length, were accompanied by visible pieces of onion, red pepper, garlic, and green onion. Chilled, the young radish stems were tender and non-fibrous with a cool, crisp texture. The pickles had a garlicky and deeply savoury flavour profile from the anchovy and fish sauce, with a mellow and enjoyable spiciness from the red pepper. The sweetness from the pear purée was very subtle. Surprisingly, unlike the typical sweetness found in Korean condiments, the savoury quality of these pickles made them an ideal accompaniment to rice or meat, providing a contrasting texture and refreshing flavour.
