Made by fermenting rice with malt, the sikhye presented a mellow rice character underpinned by a rich, malty sweetness. Unlike freshly prepared sikhye, the rice component had been blended into a fine particulate, rendering it imperceptible on the palate and removing the gentle textural contrast typically provided by softened rice grains. As a result, frequent stirring was required to keep the particulate evenly distributed; without it, the clear malt-forward liquid read as markedly sweet.

Overall, a clean, cooling sikhye with pronounced malt sweetness and minimal texture, functioning effectively as a palate cleanser alongside heavier foods despite lacking the charm of intact rice grains.
