This is the Tohato Salty Seasonal Waguri, a cookie featuring 0.7% chestnut paste, 13% Guérande salt from Brittany, France, and up to 1% alcohol (rum).

Each package contained eight individually sealed cookies. The cookies were circular, measuring approximately 4 cm in diameter and 0.7 cm in thickness, with a warm golden hue. Aroma opened with a gentle sweetness, combining chestnut, butter, and a molasses-like depth.

On tasting, the cookie felt firm on initial contact but broke apart readily into a loose, open shortbread-style crumb. The surface introduced a light savoury salinity, which framed the flavour progression. Through the mid-palate, earthy chestnut notes emerged, supported by a restrained sweetness. This was accompanied by a warm, rounded depth reminiscent of molasses, attributable to the rum, alongside a soft buttery richness from the base. Towards the finish, the elements integrated into a controlled, earthy sweetness. The salt remained present as a structuring element, preventing the profile from becoming heavy while enhancing contrast. The rum contributed aromatic warmth without any perceptible alcoholic sharpness or bitterness. The aftertaste carried a light chestnut note with a faint buttery and caramelised nuance. Texture remained light despite the richness of flavour, with a crumb that dissolved cleanly without density.
Overall, a shortbread-style biscuit with restrained sweetness, savoury salt framing, and a light, dissolving crumb supporting earthy chestnut and rum notes.

This Tohato Salty Seasonal Waguri contained 8 pieces. It was produced in Japan and purchased in Sydney Australia in 2025.
