Humble Bakery, Surry Hills

Humble Bakery remains conveniently located near Central Station to grab quick pastries.

This is the Caramelised Onion, Walnut & Confit Garlic Oil Fougasse ($6.00).

This fougasse was incredibly satisfying, tasting much like a crispier foccacia with the caramelised onion and confit garlic oil giving a deep savoury and sweet flavour. The walnuts added crunch, but not being a particular fan of them, it would’ve probably been preferable without them.

This is the Danish Sweetie ($7.50) with a frangipane centre topped with ricotta and candied orange.

This pastry had too much going on that it made it difficult to appreciate either the individual components or the sum of the parts. The softness of the ricotta with the frangipane gave the bulk of the pastry an overly mushy mouthfeel but no distinct flavour with the candied orange slice giving the much sought-after punchiness.

This is their famous Finger Bun ($6.50). It featured a thin slither of butter sandwich between a raisin bun and topped with pink buttercream.

I have no nostalgia associated with finger buns but I’ve been curious about what made Humble Bakery’s finger buns so famous. Turns out, it’s the combination of the soft and tender raisin bun with a surprising yet very enjoyable dusting of salt that cuts through the sweetness of the buttercream. The slither of butter was rather unnecessary but it didn’t create an overly greasy mouthfeel.

Strawberry Danish ($6.50). The pastry was buttery, light and flaky, while the strawberries retained their wholeness and gentle acidity but were also cooked down into a sauce with the pistachio for a jam-like sweetness. This was one very satisfying pastry.

Baklava Croissant ($7.00). I was most excited for this one, but the danish ended up stealing the show. The pastry had a sticky syrup glaze that pooled at the bottom of the pastry for an overly sweet soggy base. Moisture aside, the nuts and rose petals added textural contrast and gentle floral notes, while the denser croissant pastry meant the pastry lacked the lightness of traditional filo pastry.

Overall, Humble Bakery remains a reliable bakery for good pastry within walking distance of Central Station.
