This Daiichi Yokuhin iceplantze “MOCHI” Dessert Soy Milk & Yuzu is a plant-based mochi ice dessert made using soymilk.

The mochi was stored frozen and left to come to room temperature for 5-6 minutes before eating. Each piece was around 6 cm in diameter and consisted of a mochi exterior with an interior consisting of soymilk cream (containing 5% inulin (dietary fiber)) and a centre of sauce made from yuzu peel.

The mochi had a smooth exterior without much distinct aroma. Upon tasting, the mochi gave a delicate softness that gave way to the contrasting temperature and texture of the soy cream. The soy cream had a more powdery in appearance than milk-based cream but melted to a creamy smoothness on the palate with a gentle and complementary soybean flavour. The star of the dessert was the centre of yuzu peel, which delivered a bright and vibrant flavour of fresh yuzu without overt parallels to honeyed zesty flavour yuzu marmalade. Overall, this was a very enjoyable mochi dessert, and with soybean being a mainstay of Japanese diets, the absence of dairy had an insignificant effect on the taste or texture.
