A.P Town, Newtown

After appearing at many bake sales and opening a shop on the rooftop of Paramount House Hotel, A.P Bakery opened its aptly named standalone venue, A.P Town.

A.P Town is tucked away on a back street in Newtown, just a short walk from the main street and easily accessible by foot and public transport.

Aleppo Pepper & Asiago Cheese Scroll ($8.00)

This was the pastry that got me excited about visiting the bakery. The pastry had a crisp exterior and perfectly risen interior with buttery laminated layers. The asiago cheese brought a deeply savoury quality that went well with the Aleppo pepper, which was generous yet delivered a very manageable heat that allowed its flavour to be enjoyed along with the crunch fo the sesame seeds.

Ham & Gruyere Croissant ($9.00)

Again, the lamination here was impeccable with a crisp outer crust giving way to buttery, tender innards. I enjoyed the gentle crunch of the sesame seeds, poppy seeds and sea salt, while the ham brought a subtle sweetness to the otherwise savoury croissant, while the gruyere added a savoury depth.

Chocolate & Rye Cookie ($6.50)

This was a very rich cookie with a bold dark chocolate flavour that was countered by a similarly generous sprinkling of salt, the combination of which was almost too much. The addition of the rye gave the cookie a more ‘fibrous’ mouthfeel and with a firm crumb rather than crispiness.

Chocolate Chip Cookie ($6.00)

This was crispy on the edges, with a slightly chewy interior. An enjoyable saltiness came through on every bite of the cookie that restrained the sweetness. The chocolate chips were generous, but we would’ve preferred a darker chocolate to balance the sweetness.

Whisky Canelé ($6.00).

The top had a caramelised crunchy exterior, yet the sides and the base were somewhat soft despite the decent colouring. The whisky flavour was notable, yet its overall flavour lacked the sweet egginess of the one from Lucien Baked Goods that drew me to canelés initially.

A.P Town joins part of a steady list of bakeries in Sydney delivering delicious pastries. The technical skill was evident in every bite.
