
Pillar Brewers opened mid-2023, marketing itself as one of the few cafes in the inner west introducing specialty coffee from local micro-roasters. Accompanying their coffee was a simple menu of toasts and treats.

Hōjicha Latte (Iced) ($7.00).
Having already had our morning coffee, we decided on a hōjicha latte. Unfortunately, it lacked richness and depth, tasting mostly like lightly flavoured sweet milk due to the low level of hōjicha powder. We anticipated alternative options like their sudachi matcha, but they were unavailable. We would stick to Edition Coffee Roasters for better hōjicha and matcha experiences, though we would consider returning to try their coffee.


Black Sesame with Caramelised White Chocolate Sourdough Cookie ($4.50) from Shoebox Canteen.
The cookie was retrieved from a drawer where the first one was stuck to the base, indicating potential staleness. Despite its black sesame flavour, it lacked freshness, offering a greasy texture and bland taste. The white chocolate resembled overbaked Cadbury Caramilk rather than melting on the palate. We’d skip these cookies and spend an extra $2.00 at Kuki for a larger and tastier alternative.
While our initial experience with Pillar Brewers wasn’t great, we’d consider giving their coffee a chance if we decide to revisit.
