Marusan Soy Milk Organic Unprocessed

This is the Marusan Soy Milk Organic Unprocessed, formulated with just soybean and water to resemble the flavour of raw soy milk. It contains a minimum of 9% soybean solids—markedly lower than the 18% found in Kikkoman’s equivalent. The product is certified organic by OCIA JAPAN under the JAS standard.

The liquid had a beige hue consistent with its packaging. When consumed chilled, the mouthfeel was notably thin—lighter even than the already diluted Kikkoman version, likely due to the lower soybean content. The flavour opened with a watery impression, which persisted into the body. A grassy note emerged midway, diverging from the characteristic beany profile of processed soy milk. This shifted into a savoury, cereal-like finish. While the aftertaste was clean, a distinct astringency developed towards the end and lingered, similar to what is experienced with Kikkoman’s unprocessed variant.

Overall, this unprocessed soy milk had a very mild, bordering on bland, flavour profile. Processed soy milk remains preferable for its fuller taste and richer mouthfeel.
