A revamp of the menu at Din Tai Fung saw the introduction of new drinks including this Strawberry Bubble Italian Soda ($6.90). The drink was a cloud pink-red colour with red coloured strawberry flavoured tapioca pearls, including a few that have been frozen into the ice cubes to float in the drink.
Consumed chilled, the drink had a light carbonation with a gently acidic strawberry flavour. The sweetness is very restrained with the strawberry flavoured tapioca pearls being the highlight, bringing the more pronounced strawberry flavour and sweetness. Indeed, as the ice cubes melt, the drink dilutes to a lightly flavoured water, leaving the pearls to bring the only source of flavour.
