
Located in Iizaka Onsen in Fukushima City, Marutaki is a miso and soy sauce manufacturer established in 1889. Beyond their soy-based products, they utilise housemade kōji and locally sourced rice from contract farmers to craft amazake. This is the Marutaki Nama Amazake.
The beverage, prior to being shaken, displayed an opaque off-white hue with the bottle containing two distinct layers: fermented rice sediment at the bottom and liquid above. It had a sweet, fermented rice aroma.
On tasting, a bright, natural sweetness—distinct from sugary sweetness—emerged immediately, accompanied by delicate fermented rice notes. Mid-sip, the aromatic quality of the rice spread across the palate, while the soft fibres from the sediment provided a pleasant texture. The sip concluded with a pronounced sweet rice flavour that lingered. Overall, this amazake was notably smooth and rounded, offering a refreshing sweetness that made it exceptionally easy to drink.
This Marutaki Nama Amazake contained 500 mL. It was produced in Japan and purchased in Fukushima, Japan in 2024.
