This is Jiangxi Fagen Fermented Rice Pudding with Mulberry Juice, which is made from mulberry juice, glutinous rice and yeast.
The drink was a near-opaque pink colour with darker pink glutinous rice grains suspended throughout, and a tangy aroma of fermented rice. Upon tasting, the drink had a thick viscosity — much like a sweet dessert soup but still very much a drinkable consistency. The characteristic notes of fermented rice dominated the sip while the bright, fruity sweetness of the mulberry juice base came through at the back of every sip followed by a subtle hint of acidity in the finish. The glutinous rice grains held their shape and absorbed much of the colour and flavour of the mulberries, giving a subtle squeakiness on the teeth but otherwise adding enjoyable texture without being chewy as in the yoghurt bubble tea drinks. Overall, this was a very refreshing and enjoyable non-alcoholic rice pudding and we’d be keen to return for the other flavours.
