
Bakery Hitotema is a well-regarded neighbourhood bakery located in Yanaka Ginza. The offering reflects a characteristically Japanese approach: a Western-style bakery with local adaptations, favouring savoury breads over the sweeter styles found in Cantonese bakeries. There is also a modest selection of pastries.

The bread is baked in a rustic brick oven located at the rear of the shop.


Curry Pan (¥250)
The curry pan had well-developed spiced flavour with evident chicken notes and savoury depth. Though it had lost some of its crispness and lift by the time of tasting, the texture remained enjoyable. Unlike overly sweet variants, this leaned towards a more balanced, warming profile.


Apple Danish (¥350)
The apple retained some bite, with sweetness and acidity reminiscent of Fuji apples. The fruit paired harmoniously with the custard, while the laminated pastry offered good flake and buttery crispness.


Fermented Butter Shio Pan (¥170)
This had a soft, supple top and a mildly crisp base, with a tender interior. A competent version, though the flavour of fermented butter was restrained. The Korean interpretation of this Japanese staple, with its more pronounced butter richness and crisp texture, remains preferred.


Pizza Eggplant (¥240)
This offered generous, satisfying pieces of eggplant that retained their bite. The eggplant paired well with the cheese and tomato, evoking the flavour profile of an eggplant parmigiana. Highly snackable.

Bakery Hitotema delivers solid, well-executed staples with a Japanese sensibility. The curry pan and eggplant bread stood out for their savoury depth and balance, while the apple danish was a fine representation of Japanese-style viennoiserie. While not destination-worthy in isolation, it is a reliable and enjoyable stop when in Yanaka.
