Fabbrica Bread Shop, Rozelle

Following successful weekend-only pop-ups in 2021 at its sister pasta establishment in the CBD, Fabbrica Bread Shop opened a permanent location within Maloney’s Grocer in Rozelle. The head baker, Aniruddha Bhosekar, received training at Mumbai’s oldest hospitality institute before relocating to Australia, while fellow baker Alyce Bennett previously worked as a baker at Humble Bakery.


2023

Masala Croissant ($9.00), ‘stuffed with potato spiced with mustard seeds, cumin, curry leaves among other usual suspects and a corinader mint chutney, glazed with a tamarind syrup, some chaat masala and a fried curry leaf to finish’.

The pastry contained a generous portion of potato curry with a well-spiced and flavorful profile, accompanied by a comforting warmth. Despite the curry’s moist texture, it harmonized well with the pastry, which maintained a delicate crunch and a buttery tenderness, complemented by a subtle sweetness from the glaze. While the surface could have been crisper, akin to the version from Layers, the overall pastry proved to be highly satisfying—a successful amalgamation of Western pastry and South Asian flavours, while also evoking reminiscent notes of a Japanese curry pan.

Almond Cinnamon Scroll ($8.00). The laminated pastry was tender and buttery, although the exterior of the scroll lacked crispness, relying on the sugar to provide a subtle crunch, while the inclusion of almond paste in the cinnamon mixture introduced a delightful warmth to the usual spiced sweetness.


2024

Plain Croissant ($6.00)

This croissant had all the qualities of a good croissant: a crisp and flaky golden brown exterior, and a well-layered, airy interior with a tender buttery flavour. However, we still prefer the richer buttery flavour and glass-like exterior of the croissants from Black Cockatoo Bakery.

Ham Cheese & Kasundi ($10.00), with smoked leg ham, provolone, and tomato relish.

The pastry had a delicate crunch and buttery tenderness, with the area surrounding the filling, especially the base, well-cooked—a sign of quality. When warmed, the ham added a subtle smokiness, while the provolone contributed a smooth texture and mild smoky flavour. The tomato relish was well-spiced with a subtle heat, creating a very satisfying and flavourful pastry.


2026

Almond Cinnamon Scroll ($8.00). The pastry, remarkably, retained the same price from previous years, and remained tender and buttery. It had improved on the earlier version with the exterior of the scroll now offering a shard-like crispness, but the almond warmth and spiced cinnamon aspect seemed to be much paired back, relying simply on sugar for crunch and flavour.


The baked goods at Fabbrica Bread Shop are a delicious addition to the evolving bakery scene in Sydney. We particularly enjoyed their signature masala croissant and have revisited when in the Rozelle area.
