Ramen Keiryu, Yamagata

Ramen Keiryu is a specialist in karamiso ramen, a regional style from Yamagata Prefecture that incorporates a blend of ten different spices into a rich miso base.

Miso Ramen (¥1,100)

This bowl came generously topped with vegetables—primarily bean sprouts and cabbage—adding both volume and texture. The spicy miso paste contributed a bold, warming heat that was more pronounced than in the chūka version. The broth itself was remarkably rich yet well-balanced, with a deep chicken savouriness underscored by the complexity of the miso. Though not overly thick, the soup clung well to the noodles. The noodles are said to be specially adjusted “to suit women who eat slowly,” resting overnight to develop flavour and achieving a soft, chewy consistency on cooking.

Miso Chūka (¥890)

This version omitted the vegetable topping but included memma and white fungus, both offering enjoyable textural contrasts. The noodle portion was notably generous, accompanied by two slices of tender, thinly cut meat. The broth mirrored that of the miso ramen—deeply savoury, chicken-forward, and well-integrated with the miso. The same soft-chewy noodles featured here, retaining flavour and bite even over time.

Meat Gyōza (6 pieces, ¥480)

Each dumpling was generously filled with a seasoned pork and chive mixture, delivering a juicy bite. The skins were thin and delicate, with a satisfying crisp on the base.

Ramen Keiryu is a conveniently located ramen-ya in central Yamagata, offering flavourful dishes with generous portions and thoughtful execution. Worth a return visit when in the area.
