Bún thịt nướng & chả giò ($18.50) — grilled lemongrass pork with rice vermicelli, homemade spring rolls & salad; topped with crushed peanut & fried shallot.

The pork retained its earlier profile, with consistent smokiness and flavour clarity. The structural shift occurred in the spring rolls. The use of egg pastry rather than rice paper altered the texture significantly, producing a thicker, more dough-like crunch. Some pieces read as under-fried, introducing a soft, dense interior that reduced contrast against the rest of the dish. This moved away from the lighter, crisp profile previously observed.
