Nissin Foods Demae Iccho Hokkaidō Miso Tonkotsu

This is the Nissin Foods Demae Iccho Hokkaidō Miso Tonkotsu.

The package contained a noodle cake along with sachets of soup base and seasoning sauce. The soup base included a powdered mix with ingredients such as soya sauce powder, garlic powder, and dehydrated green onion. The seasoning sauce featured miso sauce (4%), sesame seeds, soya sauce, and chilli bean sauce (sacha sauce). To prepare, the noodles were boiled in 500 ml of water for 3 minutes, while the soup base was placed in a bowl. After the noodles were cooked, the hot water was poured over the soup base to dissolve it along with the seasoning sauce, and then the noodles were added, stirred well, and served.

The soup base had an opaque brown-orange colour and a deeply savoury aroma, though it did not distinctly resemble a typical miso broth. The flavour was rich, with a notable pork and miso foundation, but the sacha sauce contributed a dominant presence, likely tailored to appeal to the Hong Kong palate, which diminished the characteristic Hokkaidō miso profile. The sacha sauce also introduced a subtle heat, noticeable from the red oil floating on the soup’s surface. The broth coated the noodles well, which maintained a satisfying al dente texture even after sitting in the soup for some time. While the miso flavour was not as prominent as expected, and it does not compare to the Nissin Foods Japanese Ramen Hokkaidō Miso, it remains a tasty noodle dish on its own.
