Bonjuk Octopus and Kimchi Juk

This is the Bonjuk Octopus and Kimchi Juk, a prepackaged Korean rice porridge.

It was prepared by reheating the contents of the package in the microwave for 3 minutes.

The porridge presented with a vibrant red-orange hue, with visible grains of rice, several octopus legs, and pieces of cabbage kimchi. Aroma opened with garlicky kimchi alongside a distinct marine note from the seafood stock base.

Initial contact delivered a highly viscous, almost gummy consistency, with a thickener clearly present in comparison to the fresher, looser texture associated with in-store juk preparations. The structure felt dense and slightly adhesive on the palate, which proved off-putting. Texture aside, the octopus and kimchi profile was immediate, with a pronounced marine depth emerging through the stock base. The kimchi contributed a garlicky fermented quality with moderate chilli heat that lingered steadily into the finish. However, the kimchi profile lacked the brightness and acidity expected from fresher kimchi, instead leaning heavily saline through the latter stages of the palate. This reduced the sense of lift and left the finish feeling weightier than intended.

Overall, a prepackaged rice porridge with an immediate marine-to-fermented flavour progression, resulting in a flavourful but texturally compromised interpretation of octopus kimchi juk.

This Bonjuk Octopus and Kimchi Juk contained 500 g. It was produced in South Korea and purchased in Sydney, Australia in 2026.
