This is the Cold Drip Coffee from Haven Specialty Coffee ($7.50). This was my first cold drip coffee and my sheer enjoyment planted the first inklings to set up a cold drip system at home. While cold brew coffee is an immersion of coffee and cold water, cold drip coffee separates the cold water from the coffee grounds completely by using a ‘drip tower’—usually made of three glass vessels—that allows iced water to slowly drip over freshly ground coffee that then absorbs each drip of water, which then drops into a separate vessel at the bottom of the tower. The extracted liquid is a concentrate that is then diluted with water and served over ice.

The resulting coffee here was incredibly smooth with minimal acidity and bitterness as a result of cold water drawing out fewer oils and acids than hot water. The roasted notes were fuller and richer than a cold brew which tends to highlight the floral qualities of the coffee. So in essentials, it improvesdon a cold brew by capturing the full, rich flavour of an espresso-based coffee but avoided its acidity and bitterness.
