The konjac’s springy texture paired more favourably with the almond milk base compared to the chocolate variant, where the textural contrast seemed incongruous with the typical creaminess associated with chocolate. Notably, the almond flavour in this instance remained devoid of any chemical undertones, which have been encountered in Chinese almond dessert soup— a misleading term as it’s actually prepared with apricot kernels rather than almonds.
