Once removed from the liner and placed upside down on the plate, the baked apple aspect was revealed, reminiscent of an upside-down pineapple cake. The madeleine itself was light and fluffy, with a loose crumb soaked in sweet apple syrup, offering an enticing eggy almond flavour. This paired beautifully with the creamy texture of the soft baked apple, which balanced the sweetness of the madeleine with a fresh, tart apple flavour. The rich apple taste, present in the cake, baked apple, and syrup, added impressive depth, leaving no doubt that this was an apple-focused madeleine. It was thoroughly enjoyable.
