The sausages are ‘Australian lamb combined with mint and rosemary’ and cooked on medium heat for 18-20 minutes, turning occasionally.

These were our first lamb sausages and happily, these were ones that make us want to try more. The coarse ground mince of the lamb results in a firmer mouthfeel than the chicken sausage, which we prefer. The prominent lamb aroma is well restrained by the mint and rosemary — herbs that are natural pairings with the gamey meat that add flavour without masking the meat’s natural flavour.
