Koikeya The Kai no Hamayaki

This is the Koikeya The Kai no Hamayaki.

These were chips made from wheat and embedded with powder extracts from yesso scallops, clams, basket clams, oysters and prawns.

The chip was a lustrous golden brown hue, emitting a robust seafood fragrance, and featured a hexagonal configuration measuring roughly 3 x 3.5 x 0.15 cm. Upon tasting, the chips exhibited a delicate and audibly crisp texture—crispier than a kettle-cooked potato chip yet less crunchy than a senbei. The profound umami-rich flavour of shellfish—comprising scallops, clams, and oysters—became immediately evident and remained consistent throughout the chip. A mild chilli pepper heat lingered gracefully across multiple chips, contributing a pleasantly measured and laid-back spiciness. Towards the end of each chip, a subtle hint of sake surfaced, augmenting the seafood profile and evoking recollections of sake-steamed clams from Japanese cuisine. In sum, the chips’ impeccable texture coupled with their intricate shellfish flavour rendered them gratifying snacks that we would readily repurchase.
